Wild Forest Salad


This salad is a power house of nutrients being filled with protein packed pumpkin seeds and quinoa, crisp lettuce, creamy avocado, fresh veggies, all dowsed in the most refreshing white citrus balsamic vinaigrette!


Wild Forest Salad

1 box arugula

1/2 head finely chopped romaine lettuce

1 red bell pepper thinly sliced

1/2 raw unsalted pumpkin seeds

1/2 uncooked quinoa (1 c cooked quinoa)

1 creamy ripe avocado sliced

Citrus White Balsamic Vinaigrette

1 orange

1/2 c olive oil

1 Tbsp white balsamic vinegar

Black pepper to taste

1 clove of garlic

1/2 thumb ginger


Directions:

Cook the quinoa according to the package instructions and set aside to cool

Add all remaining salad ingredients into a big bowl and toss together (save some pumpkin seeds for garnish

In a high speed blender, add all the dressing ingredients and blend on high until emulsified together

Add as much dressing as you desire and toss all together

Top with rich and creamy avocado and enjoy!
