Spicy Lentil Cakes & Veggie Fries

These spicy lentil cakes with parsnip and purple carrot fries all topped with turmeric drizzle make for a delish and healthy burger and fries night!


Spicy Lentil Cakes

2 c of dry mixed lentils, or your favorite type of lentils, cooked to package instructions

2 tsp black pepper

1 tsp paprika

1 tsp cumin

1 lemon juiced

2-3 tablespoons of flax meal


Veggie Fries

2 parsnips cut into fry shapes

3 purple carrots cut into fry shapes


Directions

Add cooked lentils, spices, and lemon juice to a high speed blender and blend til 70% smooth

Add flax meal to the blender and mix in with a spoon until mixture comes together

Form into little balls and flatten between your palms

Place on a parchment lined baking sheet and bake at 400 for 20-25 minutes until firm enough to pick up easily (time varies depending on your oven)

Take the veggie fries and place on a separate parchment lined baking sheet and add to oven with the burgers for around 15-20 minutes until the edges begin to crisp
