Chop Chop Rice Salad & Creamy Lemon Cashew Dressing

This salad is the perfect blend of nutritious raw veggies with the warming comfort of delicious basmati rice!
This is my hubbys favorite way to eat his salads and definitely helps him get in those veggies!
High Raw Chopped Salad
1 box arugula
3 rainbow carrots
4 mini bell peppers
1/4 head cabbage
1/2 c white basmati rice
Bragg's 24 herbs and spices seasoning blend
Dressing
1/4 c cashew butter
Water to thin
Juice of 1 lemon
Black pepper
Directions
In a bowl wisk together the dressing ingredients until desired consistency
Finely chop the arugula (optional, but helps to make the lettuce not feel like such a large part of the meal)
Using a peeler, peel thin shreds of the rainbow carrots
Thinly slice the mini bell peppers and the cabbage
Cook the 1/2 c of rice with 1 c of water. Bring to a boil, cover, and reduce to simmer until water is absorbed
Let rice cool slightly so it doesn't wilt all your veggies. Add all ingredients, including Bragg's seasoning, to a your bowl with your dressing and mix together
