Fall Harvest Salad

Fall harvest caesar salad is always a win!

This delicious salad is filled with wonderful fall vegetables, curly kale, and covered in a creamy cashew dressing.

Fall Harvest Salad

12 oz of curly kale

3 roasted rainbow carrots sliced on the bias

1 roasted beet sliced into thin matchsticks

1 apple sliced into thin matchsticks

Dressing

3 oz raw unsalted cashews

1 whole unpeeled lemon

1 tsp black pepper

Water to thin to desired thickness

Directions

Add all dressing ingredients to a high speed blender and blend until smooth

Add all kale to a bowl and massage with the dressing

Add rest of ingredients and toss to combine
