Creamy Turmeric Lemon Pepper Mac and Cheese & Crispy Roasted Carrots
340 g of gluten free penne pasta
3 sliced on the bias orange carrots roasted
Sauce
8 oz raw unsalted cashew butter
2 lemons juiced
1 tsp turmeric
1 Tbsp black pepper
Dash of cayenne pepper
Boil pasta to package instructions and drain water, leaving the pasta in the pot
***Save 2 cups of pasta water (If you forget this step, don't worry! You can always use regular filtered water)
Add all sauce ingredients to the pot and stir together until a thick creamy goodness forms
Add in the carrots and toss to combine
You can totally stop here or you can throw this in a lined baking dish and bake at 400 til the top gets nice and crispy
