Wow! These are such a wildly sweet and healthy treat and with only 4 ingredients!
4 Ingredient Caramel Donut Bites
1 can of coconut milk out of the fridge (I use the one with coconut as the only ingredient)
2 c gf oats
3 Tbsp coconut sugar
1 jar/8 oz of pure coconut yogurt (I used Cocoyo brand. Their ingredients are all organic and only coconut and probiotic cultures)
Directions
Blend oats in a high speed blender to make oat flour and add to the coconut yogurt
Mix together until dough forms
Form dough into balls and bake at 375 until the outside is crisp but inside remains soft. Best way to tell is to give them a little squish
For the caramel glaze, in a sauce pot add the thick part off the top in the coconut milk can and the coconut sugar
Bring to boil and reduce to simmer until thickened
Add the coconut water from the can of coconut milk if you want to thin the glaze out at all
Pour glaze over donut bites and garish with shredded coconut!
